Chappell Hill Sausage Quesadillas

1/2 lb link of Chappell Hill Sausage (any flavor)
1/2 cup mixture of onions and green pepper cut up
1 cup shredded cheese (any variety)
Cut link in half and then into another half. Cut sausage into pieces. Sauté onions and green pepper. Add sausage. Remove from pan. Over medium heat, place tortilla in large pan, add cheese to cover tortilla. Add 1/2 of the Sausage and onion/bell pepper. Add more cheese to cover sausage, place another tortilla over top of cheese. Flip tortilla over when cheese has started to melt/tortilla turns crisp. When other side is crisp, it is done. Cut quesadillas into 4-6 pieces. Add favorite toppings like salsa and sour cream. This recipe makes two quesidillas.
